Whoooopie!!!!!

Pies, that is! A favorite from my youth and well, not so youth! I haven't made this in a long time as I've not felt like baking much and I truthfully don't need the sweets in the house!

So, my father-in-law loves baked/homemade goodies for gifts. Yes, he's easy! I mean what do you give a man who can buy whatever he wants to...One of his treats from home! Yes, he's a Mainer too, or should I say an Exile like myself.
Naked top/bottoms
Here they are in their naked glory, cooling off before being slathered with filling. Making these amuses me, as you never know how many you'll get, or the size. Matching them up is fun, kinda like one of those kiddie puzzles. I usually have a lone one, but not today :)

As you can see, they are darker than the above picture.

I used a different recipe today. I like it in that I finally have found the darker cookie. Maybe it was the amount or brand of cocoa. The filling is different, as I'm used to the raw egg whites for the filling, and buttermilk (although I usually make sour milk) for the cookies. I suppose I could use the powdered stuff for the egg whites. I just don't like to use raw eggs anymore in things that aren't baked.

They still taste good and better be out of my house soon! This is the closest recipe to my Mom's, sadly I lost the index card with her writing on it :( .

SUPER easy, and really yummy. Good for those days when you only want to make the effort of a cake mix. (She used red velvet, but you could use whatever flavor)

Cookies are like shoes--there are a million different types for each style--and what fun is it not trying on a bunch of different shoes/cookies?
